Argan oil: what it is and how to choose a good one

Where argan oil comes from, the difference between cosmetic and culinary oil, and what to look for on the label.

Argan oil is one of Morocco's best-known products. It comes from the kernels of the argan tree (Argania spinosa), which grows naturally in south-western Morocco, especially around the Souss valley between Essaouira and Agadir.

A protected landscape and tradition

The argan forest region was designated the Arganeraie Biosphere Reserve by UNESCO in 1998, and the practices and know-how concerning the argan tree are inscribed on UNESCO's list of the Intangible Cultural Heritage of Humanity. Much of the traditional work of cracking the hard nuts and extracting the kernels is done by women, and many producers are organised as cooperatives.

Cosmetic or culinary?

  • Cosmetic argan oil is pressed from raw (unroasted) kernels. It is light, with a faint scent, and is used on skin, hair and nails.
  • Culinary argan oil is pressed from roasted kernels, giving it a darker colour and a nutty taste. In Morocco it is drizzled over dishes or blended with almonds and honey to make amlou.

The two are not interchangeable: buy the type that matches how you intend to use it.

What to check on the label

  • For pure cosmetic oil, the ingredient list should show a single ingredient: Argania spinosa kernel oil.
  • Look for clear information about the producer or cooperative and the pressing method (cold-pressed is the norm for cosmetic oil).
  • Any organic claim should be backed by a certification logo and certifier reference on the pack.

Storing it

Keep argan oil in a cool place, away from direct sunlight, and close the bottle after use. Like other natural oils it will gradually lose freshness once opened, so use it within the period shown on the label.
